Chipotle Mazemen

Servings: 2

Ingredients:

  • 1 packet of Sun Noodle Kaedama Ramen noodles

  • 2 oz. Ground pork

  • 3oz. Chipotle peppers in Adobo sauce

  • 1 clove Garlic, minced

  • ¼ cup Coriander

  • 1-2 oz Mexican cheese

  • ¼ Red Onion, cut into rings

  • 1 oz. Sweet Corn

  • ¼ Jalapeno, thinly sliced

  • 2-4 Grape tomato, sliced

  • Lime

Directions:

  1. Heat a large pan over medium heat. Add oil and sauté garlic and ground pork; until browned. Combine chipotle sauce and mix until well combined. Remove from heat and set aside.

  2. Open one packet of Sun Noodle Ramen noodles and gently loosen the noodles. Bring 7 cups of water to a boil and cook for 1 minute and 30 seconds.

  3. After noodles are finished cooking, strain and toss noodles in prepared sauce; until well combined.

  4. Transfer noodles in a separate serving bowl. Garnish with coriander, Mexican cheese, red onions, sweet corn, jalapeno and grape tomatoes.

  5. Serve immediately. Slurp and enjoy!
